Mashed Eggplant

Side dish with beef or veal

or main course with Feta or Tofu



Ingredients (serving 1)

Protein & Carbohydrates

  • 130 g Eggplant

  • 85 g Feta or Tofu (optional)

Herbs , Spices & Others

according to your taste

  • coriander

  • paprika

  • garlic

  • safran

  • sea salt

  • cumin & fresh thyme

  • Salt & freshly ground black pepper


Preparation Steps


  1. Steam Eggplant & Garlic, 10 – 15 min. To check whether they're ready, simply squeeze the sides gently and if they're silky soft then they're done


  1. Place steamed Eggplant & Garlic in pan or pot and mash with fork and add spices, thyme, coriander, heat for a few minutes. Add some water if needed.

Enjoy with 1 slice Rye Bread, 160 g Mango & a cup of green tea
