Ingredients
120 g Chicken Breast
160 g Mango
10 g Shallots
5 g Parsley
1 Tablespoon Ghee
Herbs & Spices
Chives or Coriander (fresh) - chopped finely, add according to your taste
Garlic - chopped, add according to your taste
Madras Curry - add according to your taste
Cumin (optional) - seeds, add according to your taste
Chilli Flakes (optional) - add according to your taste
Cinnamon - add according to your tast
Salt & Pepper - add according to your taste
Preparation Steps
In a non-stick skillet, heat the oil and fry the diced onion, add the spices (not garlic & coriander) and stir well, cook for a couple of minutes
Add the diced chicken & garlic and cook until is tender, adding water if necessary.
Add chopped mango & coriander to the pan, cook at a very low temperature for another minute or two, uncovered. Do not let boil!
