Chicken with Mango

A fruity chicken - Enjoy the sweet and spicy pairing of mango


Ingredients

  • 120 g Chicken Breast

  • 160 g Mango

  • 10 g Shallots

  • 5 g Parsley

  • 1 Tablespoon Ghee

Herbs & Spices

  • Chives or Coriander (fresh) - chopped finely, add according to your taste

  • Garlic - chopped, add according to your taste

  • Madras Curry - add according to your taste

  • Cumin (optional) - seeds, add according to your taste

  • Chilli Flakes (optional) - add according to your taste

  • Cinnamon - add according to your tast

  • Salt & Pepper - add according to your taste

Preparation Steps

  1. In a non-stick skillet, heat the oil and fry the diced onion, add the spices (not garlic & coriander) and stir well, cook for a couple of minutes

  2. Add the diced chicken & garlic and cook until is tender, adding water if necessary.

  3. Add chopped mango & coriander to the pan, cook at a very low temperature for another minute or two, uncovered. Do not let boil!
